We Gave a Pig a Party

The following blog post chronicles the Pig Roast party from start to finish. If you're not prepared to do as the sign says, you might want to skip this one.
I asked Derek to make us this sign. It hung above the car port (aka the roasting pit) all day then we moved it inside.
Teri butterflied and marinated the pig at the Brinker Test Kitchen on Friday. When I asked if they named it, she said yes... Her name is Supper.

In this cooking method the pig was placed inside this box with a metal top. Hot coals were placed on top which heated the inside of the "oven". We used a digital thermometer keep the heat between 170 - 200 degrees.
Obviously we were all ready for some pork because two separate trips were made to the donut store for "pigs in a blanket" for breakfast.

Thanks to everyone who came, it truly was an international party. We had Puerto Rican rice, cookies from Peru, Italian pasta salad, empanadas, Tropical fruit salad, greek dolmas and spanakopita, sweet potatoes, brownies, Tres Leches Cake and wine and beer from around the world.

If you give a pig a party

This was one of Vin's book choices at the library yesterday. Oh the irony as we're roasting a whole pig in the backyard this weekend!
Today Teri is marinating the pig at the Test Kitchen, I'd show you pictures but it's really rather disgusting. It still has it's eyes, teeth and snout.
Yesterday at the grocery store the Puerto Rican produce guy told me that nibbling a fresh pig ear is better than nibbling a woman's ear.... We'll see about that!

It's so hot that our hot water heater (located in the attic) overheated and turned itself off but we still had warm water for a week because the daily attic heat warmed the tank!

4th of July!

I'm finally getting around to posting our 4th of July pictures. Oh time goes by so fast, it seems like we were just there with everyone and yet two full weeks have passed.
This trip was a great chance for our family to eat great food, play fun games and soak in the hot Texas sun.

I think the kids had the best time in the kiddie pool. This was the best $40 Patty and Terry have ever spent. It didn't matter if they had their suits on, their pj's or just naked, they always migrated to the pool and just jumped right in.

Sallie Please Don't Go!!

Vin's new best friend is his cousin Sallie Rose. They've spent the better part of the last week and a half together and had a blast.
Cassie and Tara took them to the aquarium yesterday and said they were setting up their own play date for next Saturday. Poor Vin is going to be so disappointed when he figures out that she doesn't really live here.
